Silver Needle Tea
Silver Needle is the highest quality white tea available, and it is famous throughout the world for its impeccable flavour and aromatic fragrance. This premium white tea is grown in the mountains of the Guangxi Province (southern China) at an altitude of approx. 1,000m. above sea level.
When brewed properly, the resulting liquor of the Silver Needle tea will be a bright clear apricot colour with a strong fresh and aromatic aroma that has delightful floral nuances. The resulting flavour is very smooth and mellow with no astringency or sharpness, and a lightly sweet floral aftertaste.
White tea is one of the most delicate tea varieties because it is so minimally processed. It is harvested before the leaves are opened fully and the young buds are still covered by fine ‘white’ hairs. Furry hairs are considered a sign of quality. Picking and choosing is done by hand.
Oolong, (Darjilong) Happy Vally Tea
Happy Valley Oolong tea from the second oldest tea estate of Darjeeling, the Happy Valley estate – and grown at an altitude of approx. 2,100m above sea level. This organic tea is a very special one that combines the typical taste characteristics of Oolong with the distinctive muscatel notes of a Darjeeling.
Happy Valley Oolong is a unique pleasure for the tea lover as the characteristic Oolong taste combines beautifully with the distinct character of a Darjeeling, giving this tea a wonderfully nutty and fruity taste.
Oolong is neither a black tea nor a green tea; it falls into its own category. Oolong leaves are semi-oxidized. This means that during production, oxidation is initiated, controlled, and halted at some point before the leaves are considered fully oxidized. The flavour profile of some Oolongs may lean more toward a fresh green tea (less oxidized) and others toward a malty black tea (more oxidized).
LYSERØD Pairings
LYSERØD pairs beautifully with light dishes within the salty kitchen. It goes especially well with seafood and particularly oysters.

Finally, the temperatures are rising! That calls for drinks in the sun. In addition to his first article, Rasmus Palsgård has accepted our challenge to create a couple of recipes for LYSERØD and RØD. We are kicking off with LYSERØD, which Rasmus has paired with a dish based on salted cod, soy sauce and lime mayonnaise, asparagus and lumpfish roe.
